Chilli Con Carne Meatballs

So after watching Jamie Oliver’s 15 minute meals a few weeks ago I was inspired to try this recipe out and with it being so fast its perfect for an evening meal and can be adjusted around the heat department lol.

I tried this over rice the first night and then had the left-overs with spaghetti the next day and it was great. Not sure the kidney beans would go with the spaghetti though!

The crispy kidney beans chucked on at the end are LUSH and I think I would actually continue to use kidney beans in this way rather than just throwing them in and them being dull and boring.

Chilli Con Carne Meatballs

Pro Points Per Serving: 7

Serves: 4

Prep Time: 10 Minutes

Cooking Time: 15 Minutes

500g Extra Lean Mince Beef

1 Teaspoon Garam Masala

1 Teaspoon Chilli Flakes

1 Teaspoon Chilli Powder

1 Teaspoon Smoked Paprika

1 Teaspoon Olive Oil

1/4 Jar Roasted Red Peppers (300g-ish jar)

4 Spring Onions

Bunch Of Coriander

1 Teaspoon Smoked Paprika

700g Tomato Passata

1 Teaspoon Olive Oil

1 Can Kidney Beans (400g Tin)

1 Teaspoon Cumin Seeds

  1. In a food processor combine the beef, garam masala, chilli powder, chilli flakes and 1 teaspoon smoked paprika along with some salt and pepper.
  2. Whizz it up until well combined and then scrape out well and divide into 16 meatballs, more if you want smaller meatballs.
  3. Heat a large frying pan with 1 teaspoon of the olive oil. Pop your meatballs into the hot frying pan and move around regularly.
  4. Pop another frying pan on and get it very hot. In the processor, blitz the peppers, the spring onions, remaining paprika, half the coriander and passata to a smooth sauce then add this to the hot pan.
  5. Once the meatballs are browned on all sides and nearly cooked, remove and place into the pan with the sauce.
  6. Add the remaining teaspoon of olive oil to the pan you have taken the meatballs from and heat to medium-high.
  7. Add the kidney beans and cumin seeds to the hot oiled pan and cook until cracked, crunchy and hot.
  8. Serve over rice or spaghetti, and the top with the crunchy kidney beans and some natural yogurt.

If you like it abit hotter add 1 teaspoon chilli flakes and 1 teaspoon of chilli powder to the sauce mixture. This will not change the pro points value per serving. Definitely try the crunchy kidney beans they are completely lovely, would be great as a side dish too if you didn’t want them sprinkled over the top.

Anyways give it a go, it was really yummy and was also great warmed up the next day. It really was quite filling and quite a large portion so for 7 points its a good dish, but don’t forget you will also need to point your rice, pasta etc.

Happy Cooking 😀
