Oh my gosh!
I can’t believe its been nearly a month since I posted, which also means its been nearly a month since I have been completely flowing the plan. Oh deary!!
I was holding on to the rails with one hand for about 3 weeks and somehow miraculously managed to loose a total of 2.5lb so that was incredible. BUT my best friend came home on the 20th off July and then I pretty much jumped off the rails head first. I was drinking most evenings for about a week, went out for about 3 meals, had take aways, pizza, Ben & Jerry’s, Krispy Kreme’s, Sangria and pots of olives! So pretty much all things fattening and delicious!
I really enjoyed it all at the time, but man has it caught up with me!!! I feel really tired and sluggish and have had a headache for nearly a week straight. My skin is DULL and drying out and just doesn’t look good no matter how much make-up I put on. I feel sooooo bloated and very fat (although I hate that word, it definitely works for how I feel) and like I have gained my 2 stone back. My hair is floppy and dull and looks greasy no matter how much I wash it.
This last week or so has proved something mega to me though. There really is NO benefit whatsoever to NOT following the plan. When I follow the plan I have more energy, I’m loosing weight, my skin is better, my hair is better and my mood and attitude is better.
Why do we constantly have the urge to “treat” ourselfs and eat these things??? As much as they might be a treat to our taste buds, they certainly aren’t a treat to our bodies who quite obviously would rather do without all this stuff, especially in excess.
So after my little epiphany over the last week I am so glad to be back on track and be back home on my blog. Unfortunately for me, I do have to go and face the scales next Thursday after not being anywhere near a pair since the 12th July!
Tonights tea was something a little different for me and my other half and was lovely and summery, the recipe is design to be cooked on either a BBQ or under a grill so would be perfect if the sun comes out again anytime soon!
Thai Red Curry Kebabs

This includes your rice!
Serves: 2
Prep Time: 10 Minutes
Cooking Time: 15 Minutes
Ingredients:
2 Chicken Breasts, Skin Off
2 Tablespoons Thai Red Curry Paste
2 Tablespoons Coconut Milk
1 Red Pepper, De-seeded & Cut Into Large Chunks
1 Courgette, Halved & Cut Into Large Chunks
1 Red Onion, Cut Into Large Chunks
125g Dried Long Grain Rice
Juice of 1 Lime
Small handful of each of the following: Coriander, Chives, Mint!
Method:
- In a large pan of boiling water, add your rice and start to cook.
- Fire up the BBQ or heat your grill to high.
- Tip the curry paste and coconut milk into a large bowl and mix until well combined. Add the chicken and stir well until the chicken is thoroughly coated.
- Thread the vegetables and chicken onto skewers (see tip below).
- Cook the skewers on either the BBQ or under the grill for 8-10 minutes, turning about half way through. The chicken needs to be cooked through and slightly charred.
- Once your rice is cooked, drain thoroughly.
- To your cooked and drained rice, add the juice of 1 lime, and a handful of coriander, chives and mint. Mix until the herbs and distributed evenly.
- Serve the rice with the kebabs on the top.
When it comes to choosing your skewers I would always use metal, if you are going to use wooden, make sure you soak them for a good few hours before using! You don’t want them catching alight. I made 2 skewers each as there was more than enough of the veg and chicken to do so. I left out the courgette as my other half doesn’t really like it so you could probably make 3 skewers each if you decided to use it.
I cooked mine under the grill and it was lovely but I’m pretty sure it would be better on the BBQ as you get the extra flavour.

Welcome back have missed your resipes, its summer so we have all been a bit naughty I went to England and ate my way to 2 kilos in 2 weeks ………Help !! Back on straight and narrow now
that is so true, i wish i had the strong ability to remember how i will feel after indulging ecsessively, but it just feels gud at the time! i have to think wot is better.. that 1-2 days of over eating or the 2-3 weeks it has set me back?
